Voilà! One Pan Salmon and Green Beans

There seems to be a common misconception that dietitians have it easier in the kitchen.  That we naturally meal plan, create beautiful food and our families are always fed and eat a well balanced and homemade meal.  While this may be true for some, it does not include all of us. The kitchen can be just as daunting for us and the feared question, “what are we having for dinner” is just around the corner.   

As much as I appreciate a beautifully balanced meal; the time involved, evening activities and picky palates can wreak havoc on the best intentions. This is where Google has become one of my best friends.  With minimal planning and few key ingredients on hand, I can type in the food, key words such as fast, easy and simple, and Voilà! I have created a masterpiece (that may be a stretch). At the very least, I have a flavorful meal that was quickly prepared and consumed.

Outside of Google, I have found that some of my favorite grocers have blogs and recipes from which I can quickly access easy weeknight dinners and more.  Often these recipes are provided by food experts and are chef inspired.  Additionally these recipes are often categorized or tagged as family friendly, one-dish, one-pan, 5 ingredients, 30-minutes or less. Basically they are screaming PICK ME!! The cherry on top?  The meals typically provide the nutrient breakdown for the home chef who is trying to keep things on the healthier side.

Here in Minnesota, Lunds & Bylerlys is one of the grocery stores I frequent and this recipe has become a keeper. For an easy weeknight dinner in less than 30 minutes, this one pan salmon and green beans provides convenience with extra Omega-3 fatty acids and a serving of veggies.  I can be rest assured that my family will eat it and I conquered one meal for the week.  ~Enjoy!
